Black And White Cupcakes


Cream cheese Layer:
8oz cream cheese, softened
1/4 cup sugar
1 large egg

Cake Layer:
1 1/2 cups all purpose flour
1 cup sugar
2 tbs unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1/2 cup water
1/3 cup vegetable oil
1 large egg
1 tsp vanilla
1/2 cup semi-sweet chocolate bits


Preheat oven to 350. Line 16 muffin cups with foil or paper liners. Prepare cream cheese layer: Beat cream cheese til smooth, then beat in sugar and egg til blended. Prepare cake layer: Mix together flour, sugar, cocoa powder, baking soda & salt in a medium sized bowl.
Whisk oil, egg & vanilla. Stir into flour mixture. Stir in half the chocolate bits. Fill prepared muffin cups half full with chocollate cake batter. Using remaining cake batter and all of the cream cheese batter, spoon batters, side by side over bottom cake layer, creating a top that is dark and white. Sprinkle tops with remaining chocolate bits. Bake for 30-35 minutes or until wooden pick inserted in center comes out clean. Cool for 10 minutes, then turn cupcakes out onto rack and cool completely.
