The Best Vegetable Beef Soup

Ingredients

  • 1 pound stew meat
  • 1 can (15 ounces) crushed tomatoes
  • 3 cups water
  • 2 medium potatoes, peeled and cubed
  • 2 carrots, peeled and sliced
  • 2 celery ribs, sliced
  • 3 beef bouillon cubes
  • 1 large onion, diced
  • 1 tsp. dried parsley
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1-1/2 cups frozen mixed vegetables
  1. In a crockpot, combine the first 13 ingredients. Cover and cook on high for 5 hours.
  2. Add vegetables, cover and cook on high 2 hours longer, or until the meat and vegetables are tender.
