The Best Taco Soup

Ingredients

  • 1 lb. hamburger
  • 1 stalk celery, sliced thinly
  • 1/2 onion, chopped
  • 1/8 tsp. garlic flakes
  • 3 tsp. dried taco mix
  • salt and pepper to taste
  • 1 1/2 cans Campbell’s condensed beef broth
  • 3 to 4 cans water
  • 1 cup tomato juice
  • 14 oz. can chopped tomatoes + juice
  • 1 cup whole kernel corn
  • 1/2 cup dry elbow macaroni
  • grated cheddar
  • sour cream
  1. Brown meat. Add celery and onion, and cook till onion is soft. Add all except last 4 ingredients.
  2. Cover and simmer about 10 minutes. Add corn and macaroni and cook until macaroni is done.
  3. Serve with a little grated cheese and a dollop of sour cream on top.
