Best Ever Peanut Butter Pie



  • 2 cups all purpose flour
  • 1 Tbsp granulated sugar
  • 1/2 tsp salt
  • 3/4 cup, plus 2 Tbsp shortening
  • 4 Tbsp COLD milk
  1. Mix flour, sugar and salt in large bowl. Cut in shortening with a pastry blender until the size of small peas
  2. With a fork, blend in milk until it all comes together and leaves the sides of the bowl
  3. This recipe makes 2 9-inch pie shells Use one and freeze the other for future use
  4. Bake at 400° until brown, about 12-15 minutes
  5. Cool thoroughly before using

Peanut Butter Crumbs

  • 1/4 cup peanut butter
  • 1/2 cup confectioners sugar
  • Blend together in a small bowl with a pastry blender

Pie Filling

  • 2 cups milk
  • 1/4 tsp salt
  • 1 Tbsp butter or solid margarine
  • 6 Tbsp granulated sugar
  • 4 Tbsp cornstarch
  • 2 egg yolks
  • 3 Tbsp cold milk
  • 1 tsp vanilla
  1. Combine milk, salt and butter in a heavy bottom saucepan and heat over medium heat until hot, but not boiling
  2. In a small bowl, blend together sugar, cornstarch, egg yolk and 3 Tbsp of milk. With a whisk or wooden spoon, stir egg mixture into hot milk, stirring constantly until mixture thickens. Remove from heat; add vanilla
  3. Place tray of ice cubes in large bowl and place pudding pan on top
  4. Continue to mix until mixture cools

To construct pie

  1. Sprinkle all but 2 Tbsp of peanut butter crumb mixture over the bottom of baked pie shell
  2. Cover with pudding. Top with Cool Whip or your favorite topping
  3. Sprinkle with remaining crumb mixture and refrigerate
