Beefy Bean Chili

Ingredients

  • 1 pound boneless chuck roast — cubed
  • 2 cloves garlic — minced
  • 1 onion — chopped
  • 2 can (14.5 oz each) diced tomatoes with chilies in juice
  • 1 tablespoon lime juice
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 2 cans (15.5 oz each pinto beans — drained and rinsed
  • 1 ounce semisweet chocolate — chopped

 

  1. In saucepot coated with cooking spray over medium-high heat, brown beef; set aside.
  2. Drain away fat; add next 5 ingredients; cook, stirring, 4 min. or until softened.
  3. Stir in next 6 ingredients; bring to a boil, reduce heat, cover and simmer 20 min. Add beans; cook 10 min. more.
  4. Stir in chocolate; season with salt and pepper, if desired.
