4# approx. beef tenderloin
1 c. soy or teriyaki sauce
1/2 c. bourbon
1/4 c. worcestershire sauce
1/4 c. cookies bbq sauce(any flavor)
2 T. brown sugar
1/2 tsp ground ginger
2 T. minced garlic
Mix the above together and marinate the beef tenderloin in the mixture for at least 4 hours and up to 12 hrs. Drain off marinade and reserve it. Season the tenderloin with Cookies Flavor Enhancer and coarse ground black pepper. Let tenderloin sit for 30 minutes. Pour reserved marinade in a pan and bring to a boil, then turn down heat to reduce marinade by about 1/4 of what you start with. In a heavy skillet over moderate to high heat with 1/4 c. oil in..sear tenderloin on all sides then place in 400 degree oven until internal meat temperature reaches 135-140 degrees for medium rare(takes approx. 40 minutes)but watch carefully so it doesn’t overcook. Let rest for 10 minutes for the juices to settle. Slice and serve with the reserved sauce that has been reduced down…mmmm good!!!!
