Beef Nacho Casserole


1 lb. ground beef

1 12oz. jar chunky salsa

1 10 1/2oz. can sweet corn

3/4 c. Miracle Whip

1 tbsp. chili powder

2 c. tortilla chips, crushed

2 c. shredded Monterey jack or Colby cheese

shredded lettuce

chopped tomato


Heat oven to 350. Brown the ground meat. Mix with salsa. Set aside. Mix corn, Miracle Whip and chili powder together and add to the meat mixture. Layer 1/2 meat mixture, then the chips and last the cheese in 2 quart casserole. Repeat layers. Bake 20 minutes or until thoroughly heated.

Top with shredded lettuce and chopped tomato, if desired.

Makes 6 servings.
