BBQ Pork and Beans
2 tsp oil
1 medium onion, chopped
2 tsp minced garlic
2 cans 16 oz each baked beans
15 oz can black beans, rinsed
1/2 cup barbecue sauce
1 tbs each cider vinegar and mustard
1/2 tsp each chili powder and ground cumin
1 pound 4″ thick chunk cooked pork loin, cubed
Heat oil in a (skillet or saucepan). Saute onion and garlic, 3 min. Stir in remaining ingredients, except pork. Bring to a boil, reduce heat and cover, simmer 15 min.
*Stir in pork, cover and (simmer 5 min.) more or until pork is heated through. Serve with coleslaw and cornbread, if desired.
