BBQ Beef-Filled Wonton Cups

Ingredients

  • 48 fresh or frozen wonton wrappers from 16 oz package, thawed
  • 14 oz deli roast beef slices, chopped (about 3 cups)
  • 3/4 cup barbecue sauce
  • 4 oz shredded Monterey Jack cheese
  1. Heat oven to 350°
  2. Lightly spray miniature muffin pans with non stick cooking spray
  3. Press 1 wonton wrapper into each cup, crimping edges to fit
  4. Lightly spray with non-stick spray
  5. Bake at 350° for 5 to 8 minutes or until light golden brown; remove from pans
  6. Repeat process until all wrappers are baked
  7. In small saucepan, combine beef and BBQ sauce over medium heat
  8. Cook until thoroughly heated, stirring occasionally
  9. Place 1 tbsp hot mixture in each wonton cup
  10. Sprinkle with 1 tsp cheese
  11. Place on ungreased cookie sheet
  12. Broil 4 to 6 minutes from heat 30 to 45 seconds or until cheese is melted
