Batter for Fish, Shrimp, Scallops
1/2 cup all-purpose flour
1/2 teaspoon seasoned salt
1/2 teaspoon paprika
Sift the above ingredients together in a mixing bowl.
1/2 cup Pancake Mix*
1/4 teaspoon cayenne
1/4 teaspoon cinnamon
1/4 cup water
1 egg, beaten
In a mixing bowl, sift together Pancake Mix*, cayenne and cinnamon. Add water and beaten egg. Mix well.
FISH PREPARATION: Prepare fish, shrimp or scallops by rinsing and drying. If using shrimp make sure shrimp is deveined. First coat with batter, then with breading mixture.
Deep fry, making sure to turn fish so all sides cook evenly. Cook until golden brown.

Note: This mixture will coat approximately 1 pound of fish, shrimp, or scallops.
