- 1/4 lb. margarine
- 2 large onions, diced
- 1 1/2 c. pearl barley (not quick)
- 2 c. chicken broth
- small can mushrooms, drained
- 1 or 2 carrots, diced
- Salt and pepper
- Melt margarine. Add onion and barley, stirring constantly until barley is lightly browned. Mix remaining ingredients with barley.
- Put in casserole dish. Cover and bake at 375 degrees for 1 hour.
Use large enough baking dish to allow for barley to expand. Freezes well.
