Barley Casserole

Ingredients

  • 1/4 lb. margarine
  • 2 large onions, diced
  • 1 1/2 c. pearl barley (not quick)
  • 2 c. chicken broth
  • small can mushrooms, drained
  • 1 or 2 carrots, diced
  • Salt and pepper
  1. Melt margarine. Add onion and barley, stirring constantly until barley is lightly browned. Mix remaining ingredients with barley.
  2. Put in casserole dish. Cover and bake at 375 degrees for 1 hour.

Note:

Use large enough baking dish to allow for barley to expand. Freezes well.
