Barbara Frietchie Pie

Ingredients

  • Pastry for one pie
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1/2 cup cream or Pet milk
  • 2 egg yolks, beaten
  • 2 tablespoons butter
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon salt
  • 2 egg whites, beaten
  • Nutmeg
  1. Line pie pan with pastry
  2. Cook next five ingredients in top of double boiler until thickened, stirring constantly
  3. Remove from heat, add vanilla, salt and egg whites
  4. Pour into pie shell and sprinkle with nutmeg
  5. Bake in hot oven (425) for 10 minutes
  6. Reduce to slow oven (300) and bake 45 minutes longer or until knife in center comes out clean
  7. Serve very cold

Notes:

  • Add 1 cup chopped dates and reduce granulated sugar to 1/4 cup.
  • Omit nutmeg and increase vanilla to 1 teaspoon
  • Omit pastry and use Brazil-nut pie shell
