Banana Cream Pie


  • 4 cups whipping cream
  • 6 oz (about two 4-serving size boxes) instant vanilla pudding and pie filling
  • 1 tsp vanilla extract
  • 1-1/2 Tbsp sugar
  • Milk (optional)
  • 1-1/2 cups ground vanilla wafers (about 15 whole wafers, or 1/2 box)
  • 3 bananas, cut into medium size slices
  • 2 Tbsp melted butter
  1. Place whipping cream, pudding mix, vanilla and sugar in bowl or blender container and mix or blend on medium speed until forms stiff peaks. If mixture becomes too stiff, add a little milk to it
  2. Remove 2 Tbsp crushed wafers and set aside. Mix remaining crushed wafers with melted butter and press onto bottom of 9″ pie tin
  3. Arrange whole wafers around side of pan
  4. Fold banana slices into pudding mixture
  5. Mound mixture into pan, taking care to cover bananas. Sprinkle top with the reserved crushed vanilla wafers
  6. Refrigerate at least 1 hour before serving
