Banana Chocolate Pie


  • 1/3 cup flour
  • 3 Tbs. granulated sugar replacement
  • 1/8 tsp. salt
  • 2 cup skim milk, scalded
  • 3 egg yolks, beaten
  • 1 Tbs. butter
  • 1 tsp. vanilla extract
  • 2 bananas, sliced
  • 1/4 cup mini chocolate chips
  • 9 in. Basic Pie Shell, baked
  1. Combine flour, sugar replacement, and salt in the top of double boiler. Blend in milk slowly. Cook until thickened. Add beaten egg yolks and cook 2 minutes longer, stirring constantly. Remove from heat, add butter and vanilla extract. Cool.
  2. Add sliced bananas and chocolate chips. Fold to completely blend.
  3. Turn into baked pie shell. Chill for at least 2 hours before serving.


  • 1/3 cup vegetable shorting
  • 1 cup flour, sifted
  • 1/4 tsp. salt
  • 2 to 4 Tbs. ice water
  1. Chill shortening. Cut shortening into flour and salt until mixture forms crumbs. Add ice water, 1 Tbsp. at a time, and flip mixture around in bowl until a ball forms. Wrap ball in plastic wrap and chill at least 1 hour.
  2. Roll to fit 9-inch pie pan. Fill with pie filling or prick with fork.
  3. Bake at 425 degrees for 10 to 12 minutes or until firm. Or leave unbaked and refrigerate or freeze until ready to use.
