Banana Bran Muffins

Makes 12 muffins

1 cup all-purpose flour

1 cup whole wheat flour

2 envelopes FLEISCHMANN’S RapidRise Yeast

1 teaspoon salt

1 / 2 cup water

3 / 4 cup honey

1 / 2 cup butter or margarine

1 cup unprocessed bran

1-1 / 4 cups mashed banana

1 / 2 cup chopped walnuts

Directions
In a large bowl, combine flours, undissolved yeast, and salt. Heat water, honey and butter until very warm (120o to 130oF). Stir in bran; let stand about 2 minutes. Gradually stir into flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Stir in banana and walnuts.

Spoon about 1 / 4 cup of batter into 12 (2-1 / 2-inch) greased muffin cups. Cover; let rise in warm, draft-free place for about 45 minutes.

Bake at 350oF for 30 minutes or until done. Remove from cups; serve warm.
