Baked Stuffed Eggs

Ingredients

  • 8 hard cooked eggs
  • 1/2 cup chopped fresh mushrooms
  • 2 Tblsp. butter
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. prepared mustard
  • 2 Tblsp. cream
  • 1 can creamed corn
  • 1/4 cup cream
  • Buttered crumbs
  1. Cut eggs in half lengthwise, remove & mash yolks.
  2. Sauté mushrooms in butter until tender & add to yolks. Add salt, pepper, mustard & 2 tblsp. cream.
  3. Refill whites with mixture. Place in shallow buttered baking dish.
  4. Add the corn mixed with 1/4 cup cream & pour around eggs. Cover with buttered crumbs & brown in hot oven.
