Baked Potato Salad
6 medium sized potatoes
1/2 cup chopped scallions
1/4 cup chives
1/2 cup cooked bacon, chopped
1/2 cup shredded cheddar cheese
1/2 cup mayonnaise or salad dressing
1/2 cup sour cream
1 Tablespoon vinegar
1 teaspoon parsley
1 tsp. salt
pepper to taste
Scrub potatoes well. Place in a large pot and boil until tender. Drain water and let potatoes cool.
Meanwhile, in a large bowl combine scallions, chives, bacon, cheddar cheese, salad dressing, sour cream, vinegar and parsley.
Cut and cube potatoes, leaving skins on. Add to bowl of seasonings, stir well.
You may heat this up in a microwave before serving, or serve chilled.
