Baked Potato Cheese Soup

Ingredients

  • 4 large baking potatoes
  • 6 Cups milk
  • 4 Tbsp butter
  • 2/3 Cup flour
  • 4 slices bacon
  • 4 green onions, minced
  • 1-1/4 Cups shredded Cheddar
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1 (8 oz.) container sour cream
  1. Bake potatoes and cool
  2. In a saucepan melt butter, add flour and blend in milk, cook medium stirring till thick, about 15 minutes
  3. Make bacon and crumble
  4. Scoop potato pulp out of skins and mash. Add crumbled bacon, onions, 1 Cup cheddar and salt and pepper to mashed potatoes. Add to milk mix and cook and stir till cheese is melted.
  5. Remove from heat. Add sour cream and blend well
  6. Garnish with remaining cheese
