Baked Penne with Turkey Meatballs


1.3 pounds pkg ground turkey
2 cups cornflakes, finely crushed
2 eggs, beaten
3/4 tsp Italian seasoning
1/2 tsp salt
1/4 tsp pepper
8 oz box gluten free rice penne pasta
26 oz jar gluten free marinara sauce
1 1/2 cups shredded reduced fat mozzarella cheese


Preheat oven to 400 degrees F. Line a baking sheet with foil. In a bowl, blend turkey, cornflakes, eggs, Italian seasoning, salt and pepper. Shape into 12 meatballs. Transfer to baking sheet. (Bake 15 min.). Turn and bake an additional 15 min. Cook pasta in boiling water for 1 min. less than package directions. Drain. Coat a 13x9x2″ baking dish with cooking spray, add pasta. Toss with the meatballs, marinara and 1 cup cheese. Scatter remaining cheese over dish. (Bake 25 min.) or until bubbly. Let stand 10 min. before serving.
