Baked Indian Pudding
1 pint milk
1/4 cup cornmeal
1/3 cup molasses
1 egg, well beaten
1/8 tsp. salt
1/4 tsp. cinnamon
1 TBS. butter
1/4 cup raisins
1/4 cup cornmeal

Instructions
Combine the butter, milk and salt, and scald. Slowly stir the cornmeal into the milk and cook in a double boiler for about 20 minutes or till thickened. Add the egg, molasses, spices and raisins. and bake in a buttered baking dish in a moderate oven (350ยง F.) for about 2 hours. Serve hot or cold with cream or vanilla ice cream.
