Bacon-Cheese Puff Pie

Ingredients

  • 1 unbaked pastry shell (9″)
  • 1 lb sliced bacon cooked & crumbled
  • 1 tomato peeled & sliced
  • 1 cup shredded cheddar
  • 3 eggs, separated
  • 3/4 cup sour cream
  • 1/2 cup flour
  • 1/2 tsp salt
  • paprika
  1. Line unpricked pastry shell with double thickness of heavy-duty foil
  2. Bake 450° for 5 minutes
  3. Remove foil, bake 5 minutes longer; cool completely
  4. Sprinkle bacon over crust
  5. Top with tomato & cheese
  6. In a bowl, beat egg yolks, sour cream, flour and salt until smooth
  7. In another bowl, beat egg whites till stiff
  8. Fold into sour cream mix. Spread over cheese
  9. Sprinkle with paprika and bake 350° for 45 minutes or till a knife inserted near center comes out clean
  10. Let stand 5-10 minutes before cutting
