Baby Lima Bean Soup

Ingredients

  • 2 pkgs (10 oz ea) frozen baby lima beans, thawed
  • 2 cans (14 oz ea) regular strength chicken broth
  • 1 med. onion, sliced
  • 1 carrot, cut in 4 pieces
  • 1 stalk celery
  • 1/4 tsp salt
  • 4 slices bacon, cooked crisp
  1. In 2 qt saucepan, combine beans, broth, carrot, celery and salt. Bring to a boil, reduce heat and simmer until beans are tender (about 15 minutes)
  2. Put soup in blender and purée. Pour the purée through a wire strainer back into the pan and reheat. (This step isn’t necessary, but makes a smoother soup)
  3. Serve with crumbled bacon over top
