Baby Cheesecake

Ingredients

How many times have you wanted just a little cheesecake –enough for 4-6 people or seconds for three? Dollar stores are the place to get the 7 inch springform pans.This is a great hostess gift cake too if you are toting it somewhere for a Shavuot post services brunch.

Crust
1 cup shortbread cookie crumbs
3 tablespoons unsalted melted butter
2 tablespoons brown sugar
¼ teaspoon cinnamon

Filling
1 pound cream cheese
1/4 cup sugar
1 can condensed milk
3 eggs
1 tablespoon lemon juice
2 teaspoons pure vanilla extract

Instructions
Preheat oven to 325 F.

Toss crust ingredients in the pan bottom and press into place.

Place all filling ingredients in a food processor and blend about 2 minutes until smooth.

Pour into pan. Bake (setting pan in a water bath, preferably) 35-45 minutes or until just set.

Refrigerate at least 6 hours before serving. Use any topping (dusting with confectioners sugar and lemon curd, fresh raspberries on the side is fine).
