Autumn Apple Bread

Ingredients

  • 1/4 c shortening
  • 2/3 c sugar
  • 2 eggs beaten
  • 2 c flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 c coarsely grated peeled apples
  • 1 T grated lemon rind
  • 2/3 c chopped walnuts
  1. Cream shortening and sugar until light and fluffy; beat in eggs.
  2. Blend next 4 ingredients. Add alternately with apple to egg mixture. Stir in lemon rind and nuts.
  3. Grease and flour 9x5x3″ loaf pan.
  4. Bake 350° 50-60 minutes.
  5. Cool before slicing.
