Aunt Mena’s Pecan Pie


  • 1-1/2 cups light com syrup
  • 1/2 cup sugar
  • 4 Tablespoons butter or margarine
  • pastry for 1-crust 9-inch pie
  • 1 cup coarsely chopped pecans, plus some halves
  • 3 slightly beaten eggs
  • 1 teaspoon vanilla
  • dash salt
  1. In saucepan, combine com syrup, sugar, and butter or margarine; bring to boiling
  2. Boil gently, uncovered, 5 minutes, stirring occasionally; cool slightly
  3. Line 9-inch pie pan with the pastry; flute edges. Place pecans in bottom of pie pan
  4. Combine eggs, vanilla, and salt; pour syrup into eggs and beat well. Pour over nuts (pecans will rise to top)
  5. Bake in 375-degree oven for 30 to 35 minutes or until done
  6. Top each piece with whipped cream if desired
