Artichoke Pudding
Ingredients
10 cooked artichokes
1/4 cup oil
1 onion, minced
3 cloves garlic, crushed
4 bread slices that have been soaked in milk
1 teaspoon oregano or Italian seasoning
3/4 cup cottage cheese
5 eggs
salt, pepper to taste
1/2 cup breadcrumbs
6 Tablespoons Parmesan cheese
Instructions
Preheat oven to 400 degrees F. Grease a 9-inch round pan baking dish or one of similar size.
In a saucepan, simmer onions and garlic in oil until soft. Remove from heat and add organo. In a food processor blend artichoke’s heart, soaked bread and onion mixture. Pour into a bowl and add Parmesan cheese, salt, pepper, and beaten eggs.
Sprinkle baking pan with 1/2 of the breadcrumbs, pour mixture over top and sprinkle the rest of the breadcrumbs over the top.
Bake at 400 degrees F. for 30-35 minutes.
