Apricot Rum Sauce for Peach Pie
1 1/2 cups sugar
3 (12 oz.) jars apricot jam (no-sugar added) or spreadable fruit
3/4 cup rum
3 teaspoons fresh lemon juice
In a small saucepan, combine sugar, jam and rum; bring to a rapid boil for 5 minutes. Remove from heat and stir in lemon juice. Spoon over pie slices.
