Apricot-Raisin Quick Bread

Ingredients

  • 1 3/4 cup sifted flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2/3 cup sugar
  • 1/2 tsp cinnamon
  • 1 cup mashed apricots
  • 1/3 cup soft margarine or butter
  • 2 eggs unbeaten
  • 2/3 cup raisins
  1. Sift dry ingredients together in a large bowl.
  2. Add the mashed apricots, margarine and eggs. Beat until mixed, about 1 minute. Add raisins.
  3. Bake in a greased loaf pan about 50 minutes or until toothpick inserted in the middle comes out clean.
