Applesauce Cake Roll

Ingredients

  • 3 eggs
  • 3/4 c sugar
  • 1 (8oz) can applesauce
  • 1 c flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 tsp cloves
  • 1 c whipping cream
  • 1/3 c chopped walnuts
  1. Beat eggs until thick
  2. Gradually add sugar, beating well
  3. Add 1/2 c applesauce
  4. Sift dry ingredients; fold into egg mixture
  5. Spread in greased & floured 15 x 10 x 1″ jelly roll pan
  6. Bake 350° 15-20 mins.
  7. Loosen sides & invert onto towel sprinkled generously with powdered sugar
  8. Roll up carefully..
  9. Let cool on rack
  10. Whip cream until soft peaks form.
  11. Fold in remaining applesauce & nuts
  12. Unroll cake; spread applesauce mixture over cake
  13. Roll up; chill.
  14. Garnish with additional whipped cream.
