Apple Stuffing For Pork Roast
4 tbsp. bacon fat
1/2 c. (each) mushroom pieces, chopped onion, chopped celery
1 tsp. parsley
Heat fat and cook this mixture for 2 minutes, then add 2 cups diced tart apples (unpeeled), 2 teaspoons sugar–cook for 5 minutes, then add 1/2 cup dry bread crumbs, salt, nutmeg and cinnamon to taste–mix all together; use as stuffing for a pork roast or serve as a side dish.
