Apple Streusel Muffins
Ingredients
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons Clabber Girl Baking Powder
1 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1 cup sour cream
1/2 cup melted butter
1 cup diced, tart apples
STREUSEL TOPPING:
1/2 cup chopped walnuts
1/4 cup all-purpose flour
3 tablespoons sugar
2 tablespoons soft butter
1/4 teaspoon cinnamon
Instructions
Blend dry ingredients, then set aside. Whisk eggs, sour cream and butter together. Stir in diced apple. Pour egg mixture over flour mixture and fold just until dry ingredients are moisened. Spoon batter into 18 greased muffin cups. Mix streusel ingredients together, then top each muffin with streusel.
Bake approximately 20 minutes at 375 degrees, or until toothpick inserted in center comes out clean.
