Apple Nut Bread

Ingredients

  • 1/4 c shortening
  • 2/3 c sugar
  • 2 eggs beaten
  • 2 c flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 c coarsely grated peeled raw apples
  • 1 T grated lemon rind
  • 2/3 c chopped walnuts
  1. Cream shortening and sugar until light and fluffy. Beat in eggs.
  2. Sift next 4 ingredients.
  3. Add alternately with apple to egg mixture. Stir in rind and nuts.
  4. Bake in greased and floured loaf pan, 9x5x3 @ 350° 50-60 min. Cool before slicing
