1 cup all-purpose flour
1 1/2 teaspoons Clabber Girl Baking Powder
1/2 teaspoon salt
1 tablespoon sugar
1 egg, beaten
1 tablespoon butter
1 cup tart apples, peeled and diced
1/2 to 3/4 cup milk
oil for deep frying
Sift together flour, Clabber Girl Baking Powder, salt and sugar. Combine beaten egg, butter and apples; add to dry mixture. Add milk until batter is the right consistency.
Drop into deep hot oil (about 365 to 375 degrees F) by tablespoonfuls and fry until done (about 5 minutes). Turn while frying to cook evenly. Sprinkle with confectioners’ sugar.
