Apple-Corn Bread Muffins

Ingredients

  • 1 package (8 1/2 oz.) corn muffin mix
  • 1 cup chopped, peeled apple
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped dates
  • 1/3 cup milk
  • 1 egg, slightly beaten
  • 1 teaspoon sugar
  • 1/4 teaspoon cinnamon
  • Vegetable cooking spray
  1. Mix together muffin mix, Michigan Apple, walnuts, dates, milk and egg only until combined. Portion into 2 1/2-inch muffin-pan cups coated with cooking spray.
  2. Sprinkle batter with mixture of sugar and cinnamon.
  3. Bake at 400o F about 17 minutes or until golden brown. Serve warm.
