Apple-Cheese Cornucopia Rolls

Makes 12 rolls


4 to 4-1 / 2 cups all-purpose flour

1 / 2 cup firmly packed brown sugar

1 envelope FLEISCHMANN’S RapidRise Yeast

1 teaspoon salt

1 teaspoon ground nutmeg

3 / 4 cup milk

1 / 4 cup water

1 / 4 cup butter or margarine

1 large egg


Apple-Cheese Filling

1 (8-ounce) package cream cheese, softened

1 / 4 cup sugar

1-1 / 2 teaspoons ground cinnamon

1 / 4 cup chopped pecans

1 / 4 cup raisins

1 medium apple, peeled, cored and finely diced


Egg Glaze

1 egg white

1 tablespoon water

1 tablespoon sugar

In a large bowl, combine 1 cup flour, sugar, undissolved yeast, salt and nutmeg. Heat milk, water and butter until very warm (120o to 130oF). Gradually add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add egg and 1 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.

Divide dough into 3 equal pieces; roll each piece into a 9-inch square. Cut each square diagonally from corner to corner, forming 4 triangles. Position each triangle with the point at the top and away from you. Place a large spoonful of Apple-Cheese Filling on the right-hand side of each triangle, leaving a 1 / 4-inch border; moisten cut edges with water. Fold and stretch left side of each triangle over the filling; tuck under the right side. Pinch tip of dough to ensure that the filling is enclosed, forming a cornucopia. Place, about 2 inches apart, on a large greased baking sheet. Spoon any leftover filling on to each roll at the opening of the cornucopia. Cover; let rise in warm, draft-free place until puffy, about 30 minutes.

Beat egg white and 1 tablespoon water together; brush over dough. Sprinkle evenly with sugar. Bake at 350oF for 20 minutes or until done. Remove from sheet; serve warm.

Apple-Cheese Filling:
In a medium bowl, beat cream cheese with sugar and cinnamon until smooth. Stir in nuts, raisins and apple.
