Apple Butterscotch Bread

Ingredients

  • 2 cups biscuit baking mix
  • 1 cup quick cooking oats
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup butterscotch chips
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts or peanuts
  • 1/3 cup milk
  • 1 egg
  • 1 cup applesauce
  1. In a large bowl, stir together the biscuit baking mix, rolled oats, sugar, salt and baking powder. Add the butterscotch chips, raisins, and nuts.
  2. In a small bowl, combine the milk and the egg, then stir into the batter.
  3. Add the applesauce and beat the mixture vigorously by hand for 30 seconds.
  4. Spoon mixture into a 9-inch loaf pan or pie pan.
  5. Bake for 50 to 60 minutes or until golden brown and the top springs back when touched.
