Anticuchos (Marinated Meat Cubes)

Ingredients

  • 2 lbs top round or sirloin steak, cut into 1-inch cubes
  • 2 jalapeno peppers
  • 1/4 cup red wine vinegar
  • 1/4 tsp black pepper
  • 1/2 tsp oregano
  • 1/2 tsp paprika
  • 1/4 cup oil
  • 1/2 tsp salt
  • 2 cloves garlic (or to taste)
  • 1/2 tsp ground cumin
  1. Remove stems and seeds from jalapenos and discard
  2. Puree jalapenos in a blender
  3. Add the remaining marinade ingredients and blend well
  4. Pour mixture over cubed meat
  5. Cover and refrigerate to a minimum of 12 hours
  6. Bake or broil marinated meat
