Another Bloody Day In Paradise Conch Fritters

  • 1 tsp baking powder
  • 1 lb conch
  • 1/4 cup red pepper, minced
  • 1/4 cup green pepper, minced
  • 1/2 cup onion, minced
  • 1 egg
  • 1 cup flour
  • 1 tspĀ Another Bloody Day In Paradise Hot Sauce
  • 1 tsp Old Bay seasoning
  • 1/2 tsp garlic salt
  • fish or seafood or milk, as needed
  • Oil for frying

Rinse conch, remove orange fin and foot. Pound the heck out of it with a meat tenderizer, then cut into minced pieces. Add vegetables to conch. Mix well and add seasonings and egg. Mix in flour a little at a time. For extra flavor, add 1 TBS fish or seafood stock. Roll into balls. Fry in oil to cover at 350 degrees, adding one at a time. Wait a few seconds before adding the next one. Fry about 5 at a time for about 15 minutes or until golden brown. Cooking a few at a time will keep the oil at a constant temperature and will keep the fritters crunchy instead of oil-logged. Drain and serve with sauce.
