Amish Apple Pound Cake

Ingredients

  • 1 cup vegetable oil
  • 1-1/2 cups sugar
  • 2 eggs + 1 egg white
  • 1 tsp vanilla
  • 2 cups flour
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 3 large apples, peeled, cored & finely diced
  • 1 cup chopped nuts

Frosting

  • 1/2 cup oleo, softened
  • 1 egg yolk
  • 1 tsp vanilla
  • 1-1/2 cup powdered sugar
  1. In a large bowl, beat oil and sugar until smooth
  2. Beat in eggs, egg white and vanilla
  3. Stir in flour, soda, salt and cinnamon, beat well
  4. Stir in apples and nuts
  5. Bake in 350° oven in a greased 9×13 pan for 45 minutes or until center springs back when pressed
  6. Beat oleo in bowl
  7. Add remaining ingredients of frosting and beat until smooth
  8. Spread on cooled cake
