Almond Muffins

Ingredients

  • 1-3/4 c flour
  • 1/3 c sugar
  • 2-1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 beaten egg
  • 3/4 c milk
  • 1/3 c oil
  • 1 c finely chopped peeled pear
  • 1/2 c chopped almonds, toasted
  1. Mix dry ingredients. Make a well in center of dry mixture
  2. In separate bowl mix egg, milk and oil
  3. Add all at once to dry mixture
  4. Stir just until moistened. Batter will be lumpy
  5. Carefully fold in pear and 1/4 c almonds
  6. Spoon batter into prepared muffin cups, filling each 2/3 full
  7. Sprinkle remaining nuts on top
  8. Bake 400 20-25 min. until golden
