Applesauce Dessert Waffles

4 apple-cinnamon, blueberry, or plain frozen waffles
3/4 c. Mott’s chunky applesauce
3 tbsp. maple syrup or maple flavored
1/2 tsp. ground cinnamon
Frozen vanilla yogurt


In a toaster, toast waffles according to package directions. Meanwhile, in a small saucepan, stir together applesauce, maple syrup and cinnamon. Cook and stir over medium heat about 3 minutes or until heated through. Place waffles on 4 dessert plates. Top each waffle with a scoop of frozen yogurt. Spoon warm applesauce mixture over ice cream. Makes 4 servings.

Apple Streusel Coffee Cake

2 cups Bisquick baking mix
1 teaspoon cinnamon — (ground)
2/3 cup applesauce — (sweetened)
1 teaspoon vanilla
1/4 c. sugar
1 egg
1/4 c. vegetable oil

Streusel topping
1/4 cup Bisquick(r) baking mix
2 teaspoons butter or margarine — (firm)
1/2 teaspoon ground cinnamon
2 teaspoons chopped nuts — (finely chopped)
1/4 cup brown sugar — (packed)


Grease round pan, 9 x 1 1/2″. Mix all ingredients except Streusel Topping until moistened. Spread batter in pan; sprinkle with Streusel Topping. Bake in a preheated 400 degree oven until wooden toothpick inserted in center comes out clean, about 20 to 25 minutes. Streusel Topping: Mix all ingredients until crumbly.

Apple Pumpkin Bread

2 cups all-purpose flour
1 1/3 cups whole-wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
pinch each allspice, nutmeg, mace
1/2 teaspoon salt
1 15 oz. can Libby’s® Pumpkin
4 eggs
3/4 cup sugar
1 cup apple sauce
1/2 cup honey
1/3 cup vegetable oil or melted butter
1/2 cup Granny Smith apples, peeled & chopped


Preheat oven to 350°F. Grease two loaf pans with vegetable oil or non-stick spray. Mix both kinds of flour, baking powder, baking soda, spices and salt in the large bowl of an electric mixer. Stir together pumpkin, eggs, sugar, applesauce, honey, oil or melted butter in a large bowl. Combine pumpkin mixture with dry ingredients, stirring only until combined. Stir in apple. Pour half of the batter into each loaf pan and bake at 350°F for 50-55 minutes, or until a toothpick inserted in center comes out clean. Cool on wire rack for 10 minutes before removing from pan.

Apple Raisin Bran Muffins

1-1/2 c. shreds of wheat bran cereal
1 c. skim milk
1/4 c. Promise spread, melted
1/2 c. honey
1 lg. cooking apple, peeled and grated or chopped (1-1/2 c.)
3/4 c. raisins
1 lg. egg, well beaten
1 tsp. cinnamon
1 1/4 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda


Heat oven to 400 degrees. Lightly grease 12 muffin cups. In a large bowl, soak cereal in milk for 5 minutes. Stir in Promise, honey, apple, raisins, egg, and cinnamon. In another bowl, combine remaining ingredients. Fold flour into apple bran mixture, just enough to moisten. Do not overmix. Evenly distribute among muffin cups. Bake 20 minutes or until done. Each muffin has 4.3 grams of fat and 23 milligrams of cholesterol – 205.6 milligrams sodium and 169 calories. Makes 10 or 12

Apple Pound Cake

1-1/2 c. corn oil
2 c. sugar
3 eggs
2 tsp. vanilla extract
3 c. flour
1 tsp. soda
1 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
2 c. chopped, peeled apples
1 c. chopped walnuts
1/2 c. raisins


Beat oil, eggs, sugar and vanilla until well blended. Combine dry ingredients and add to sugar mixture, beating well. Stir in apples, nuts and raisins. Spoon batter into greased and floured bundt pan. Bake at 375 degrees for 1 hour and 15 minutes.

Apple Pecan Pancakes

2 c. all purpose flour
1 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
2 lg. eggs
2 c. buttermilk
2 tbsp. melted butter
1 tsp. vanilla
1-1/2 c. finely chopped peeled apples
1/2 c. finely chopped pecans


In a bowl, combine the flour, baking powder, salt and sugar. In another bowl, beat the eggs. Add the buttermilk, butter and vanilla and mix thoroughly. Add the milk/egg mixture to the dry ingredients and stir just until well combined. Fold in the apples and nuts. Allow the mixture to stand for 15 minutes. Heat a griddle to 350 degrees. Oil lightly with vegetable oil. Drop approximately 1/4 cup of batter on griddle for each pancake. When the surface is set and covered with bubbles, turn and brown the other side. Serve immediately with warmed maple syrup. Makes 6 to 8 servings.

Apple Pecan Baked Pancake

1/2 cups Bisquick baking mix
2 tablespoons butter — (melted)
1 c. Granny Smith apple — (peeled and sliced)
1/3 cup pecans — (chopped)
3 tablespoons maple syrup
1/2 teaspoon cinnamon — (ground)


Heat oven to 350 degrees. Prepare pancake mix according to package directions; and set aside. Pour melted butter in 9″ pie plate. Place apple slices in bottom of pie plate; sprinkle cinnamon and pecans and drizzle syrup over apples; carefully pour batter on top.

Bake at 350 degrees for 30-35 minutes or until top springs back when touched. Loosen edges and invert onto serving plate. Cut in wedges and serve with warm maple syrup and/or fresh apple butter.

Serves 4 to 6. Good served with sausage links.

Apple Pancakes With Cider Syrup

3 sweet apples
2 c. milk
2 c. Bisquick baking mix
1 egg


Prepare bacon. Peel and core apples; dice fine. Beat egg. Stir in Bisquick and milk. Add apples. Make silver dollar sized pancakes on buttered skillet or on buttered grill. Form 2 piles of cakes, surrounded by bacon. Serve with hot butter and cider syrup.

Apple Pancakes 2

1/4 c. margarine
1 1/2 c. thinly sliced, peeled apples
1/2 c. sugar
1/2 tsp. cinnamon
1/4 tsp. nutmeg

1 c. Hungry Jack pancake mix
3/4 c. water
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. vanilla

1 tbsp. sugar
1/4 tsp. cinnamon


In a 9-inch microwave pan, microwave margarine until melted. Stir in apples, 1/2 cup sugar, 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg. Cover, microwave on high 3-4 minutes or until apples are tender. In a medium bowl, blend all batter ingredients, pour over cooked apples. In a small bowl, combine all topping ingredients and sprinkle over batter. Microwave on high 3-5 minutes or until toothpick inserted 1 1/2 to 2 inches from edge comes out clean. Cut into wedges to serve.

Apple Pancakes

2 Granny Smith apples, peeled, cored,and sliced
1 c. flour
1 c. milk
6 eggs
1 tsp. vanilla
1/4 tsp. salt
1/4 tsp. nutmeg
2 tbsp. Butter


In mixer or blender, beat flour, milk, eggs, vanilla, salt, and nutmeg; set aside. Heat oven to 475 degrees. In cast iron skillet for 5 minutes, add 2 tablespoons butter; melt. Add sliced apples and fry 2 to 3 minutes. Pour mixture over apples. Bake at 475 degrees for 15 minutes. Reduce heat to 425 degrees for 8 to 10 minutes. Sprinkle with powdered sugar. Cut in wedges. Serve with syrup or jam and bacon.
