Bacon And Egg Bake

6 slices bacon
2 med. onions, sliced
1 can cream of mushroom soup
1/4 c. milk
5 hard cooked eggs, sliced
2 c. (8 oz.) shredded Cheddar cheese
Dash of salt & pepper
English muffins, split & toasted

Instructions

Heat oven to 350 degrees. Fry bacon until crisp. Remove from skillet. Drain fat, reserving 2 tablespoons. Saut‚ onion in bacon fat. Stir in soup, milk, eggs, cheese and seasonings. Pour into 10 x 5 inch baking dish. Top with crumbled bacon. Bake 20 minutes. Serve on muffin halves. 6 to 8 servings.

Asparagus Egg And Cheese Casserole

3 tbsp. butter
3 tbsp. flour
1/4 tsp. dry mustard
1/2 tsp. salt
Pepper
3-4 hard-cooked eggs
1 1/2 c. milk
1/4 to 1/2 c. grated cheese
1 bunch fresh asparagus, cooked or 1
med. can (can use broccoli)
1/2 c. crushed chips or bread crumbs

Instructions

Make cheese sauce by melting butter, adding flour, mustard, and salt. Add milk, 1/2 cup at a time, and bring to a boil. Then add cheese and immediately remove from heat. Stir until cheese has melted. Taste and season. Place thin layer of sauce on bottom of oven-ware dish and put asparagus on top, then sliced eggs. Continue to layer. Cover with chips or crumbs. Bake at 370 degrees for 20-30 minutes or until all ingredients are hot and topping golden brown. 4-5 servings.

Apricot Bran Muffins

1-1/4 c. all purpose flour
1 c. natural bran
1/3 c. brown sugar
1 tbsp. baking powder
3/4 tsp. cinnamon
1 egg
1 ripe banana, mashed
1/3 c. honey
1/3 c. butter, melted
3/4 c. milk
1/3 c. chopped dates
1/3 c. dried apricots

Instructions

Stir together flour, bran, brown sugar, baking powder and cinnamon. In a separate bowl, beat egg lightly. Stir in mashed banana, molasses or honey, butter and milk. Stir flour mixture into milk mixture just until blended. Mix in dates and apricots. Spoon batter into buttered muffin pans. Bake in a preheated oven at 400 degrees for 20 to 25 minutes.

Applesauce Walnut Muffins

1/3 c. margarine
1/3 c. brown sugar
2 egg whites
3/4 c. unsweetened applesauce
1/2 c. skim milk
1 1/2 c. unbleached flour
1 c. oat bran
1 tsp. Cinnamon
1 tsp. baking powder
1/4 tsp. Nutmeg
1/4 c. chopped walnuts

Instructions

Preheat oven to 375 degrees. Put paper liners in 12 muffin cups. In a large bowl combine margarine and sugar: beat well. Add egg whites and mix together thoroughly. Stir in applesauce and milk. Stir together flour, oat bran, cinnamon, baking powder and nutmeg. Add the dry mixture to the creamed mixture, mixing just until dry ingredients are moistened. Do not over mix. Stir in walnuts. Fill muffin cups 2/3 full. Bake 20 minutes or until lightly browned. Cool on wire rack.

Apricot Cake

1 pkg. yellow cake mix
1 box orange Jello
1 c. apricot nectar
3/4 c. Wesson oil
4 eggs, 1 at a time

Instructions

Mix well. Pour into a slightly greased tube pan and bake at 350 degrees for 1 hour. Glaze while warm.

GLAZE
One to 2 cups powdered sugar mixed with enough nectar to spreading consistency.

Applesauce Spice Cake

1/4 cup butter or margarine
1/2 cup sugar
1 egg
1/2 teaspoon vanilla
3/4 cup applesauce
1 cup flour
1 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
1/2 cup raisins
1/2 cup chopped pecans

Instructions

Cream butter and sugar. Add egg and vanilla and beat well. Beat in applesauce. Combine flour, soda and spices and stir into creamed mixture. Blend in raisins and nuts. Pour into greased and floured Bread ‘n Cake Bake pan and cover. Place in Crock-Pot, cover and bake on High 2-1/2 to 4 hours. Serves 12.

Double recipe for 5-quart Crock-Pot.

Applesauce Raisin Cake

2 cups raisins
2 cups water
2 cups all- purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 cup unsweetened applesauce
2 eggs
1/2 cup vegetable oil
3 Tablestoons liquid sugar substitute
Cooking spray

Instructions


Combine flour and next 3 ingredients, stirring well. Set aside. Combine applesauce and next 3 ingredients in a large bowl. Add flour mixture to applesauce mixture, stirring until blended; fold in raisins. Pour batter into a 13×9 inch pan coated with cooking spray. Bake at 350 degrees for 35 minuter or until wooden pick inserted in center comes out clean. Cool in pan on wire rack 10 minutes; remove from pan, and let cool completely on wire rack. Makes 12 servings

1 tsp. lemon juice
1 c. applesauce
1/2 c. milk

Beat all ingredients until smooth. Pour onto hot griddle and cook as other pancakes.
