Applesauce Raisin Cake
2 cups raisins
2 cups water
2 cups all- purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 cup unsweetened applesauce
2 eggs
1/2 cup vegetable oil
3 Tablestoons liquid sugar substitute
Cooking spray
Instructions
Combine flour and next 3 ingredients, stirring well. Set aside. Combine applesauce and next 3 ingredients in a large bowl. Add flour mixture to applesauce mixture, stirring until blended; fold in raisins. Pour batter into a 13×9 inch pan coated with cooking spray. Bake at 350 degrees for 35 minuter or until wooden pick inserted in center comes out clean. Cool in pan on wire rack 10 minutes; remove from pan, and let cool completely on wire rack. Makes 12 servings
